Michelin-starred
chef Paul Kitching has today confirmed the venue for his new Edinburgh restaurant opening in Spring 2009.
Kitching, once called ‘the shining star of the North' by Gordon
Ramsay will open the restaurant in partnership with his partner Katie
O'Brien. The venue will be No 3, Royal Terrace, which is the site of what
was No 3 restaurant until July this year.

The interior of No
3 Royal Terrace is in keeping with many of the elegant townhouses on this fine
example of a Georgian crescent and has retained many of its original
architectural features. Paul and Katie are currently refurbishing the property
ahead of the restaurants launch and further details of the restaurants name,
menu and interiors will be available shortly.

Paul Kitching: A change in
career from labourer to pot washer in 1981 brought Paul Kitching into catering
at the age of 20. Since that time he knew instinctively that being a chef was
for him. After completing three years of catering studies at Newcastle
Polytechnic and York University Paul secured roles at various Michelin-starred
restaurants including Canterbury's 74
Restaurant and Gidleigh
Park. He later moved to
Nunsmere Hall Hotel in Cheshire
as Head Chef where his partnership with Katie O'brien began. Glowing
reviews followed. Paul answered an ad in Caterer & Hotelkeeper which read
"Wanted; an artistic person with open mind, flair and imagination for new
concept in cooking."  This led to his collaboration with Juniper.
Paul advises all his dishes begin as a sketch detailing how the finished recipe
will look, for example, on Juniper's square, glass plates which are
reminiscent of picture frames - an indication of the sense of artistry Paul
brings to his cooking.  While his creations yielded unexpected
combinations the deep thought given to the balance of each dish ensures
flavours that complement rather than compete and meals that are memorably
exciting.  When cooking all Paul's new dishes are subject to the
first time test; if they don't work first time, he returns to the drawing
board. Juniper received accolades and praise from fellow chefs and reviewers
alike. Under Paul Juniper became the North West's only 4AA rosette
restaurant and Greater Manchester's only Michelin-starred restaurant and
ranking in the top 20 restaurants in The Good Food Guide and England's
Restaurant of the Year in 2003.

Katie O'Brien: Katie
followed in her father's footsteps into the world of catering, growing up
in a succession of hotels where he worked in Scotland and landing her first
front of house position at the tender age of 14. Her first key role was role
was Restaurant Manager at Nunsmere Hall Hotel & Restaurant at just 23 years
of age.    By her own admission, Katie says she fell in love
with Nunsmere's unpretentious and friendly atmosphere where she spent two
years working with Paul.  It was Paul, who sparked her interest and
educated her in truly fine food.  Katie then moved to Hambleton Hall in Rutland, the Michelin
starred Victorian country house hotel as Deputy Hotel Manager for three years.
Katie fondly remembers her days at both these establishments but Juniper, which
she ran with Paul remains her true love. Katie's personality and past
experience shaped Juniper into a restaurant with a friendly, unpretentious and
informal feel.
